Carrot Walnut Cookies
Ingredients:
- 1 C raw unsalted walnuts
- 1 C rolled oats
- 1 C raisins
- 1/2 C whole wheat flour
- 1 1/4 tsp baking powder
- 1 1/4 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2 carrots, grated
- 1 apple, grated
- 1 very ripe banana
- 1/4 C apple juice
Preheat oven to 350 F. Line Baking sheets with parchment paper. Combine walnuts, oats and raisins in a food processor and pulse until finely ground. Transfer to a bowl and stir in flour, baking powder, cinnamon, and ginger. Add carrots, apple, banana and apple juice and stir until combined. Drop by rounded tablespoons an inch apart on the baking sheets, making about 24 cookies. Press down with the back of fork to flatten slightly. Bake until tops and bottoms are lightly browned, 20-25 minutes.
Avocado chocolate mousse. Google it.

DeleteWhite flour can be replaced in equal parts with whole wheat (you can try white whole wheat, Trader Joe's has one, or Arrowhead Mills pastry flour, it is the best, can usually be found in Shoprite) but be sure to then omit baking powder. As for white sugar, can she consume evaporated cane juice/succanat? It is sugar but less processed than white. If not, there are plenty of cake recipes available that use agave syrup.

I'm not sure why there is baking powder in that recipe because it is usually a disaster with whole wheat (think volcano science project in your oven).
Thanks Lea! Succanat is fine, so I plan to use that instead of white sugar. That brownie recipe looks great. Lol, I've never heard that about baking powder and whole wheat, good to know!

DeleteOoo thanks for posting this! I actually needed a semi-dietetic cookie recipe to make for someone this Purim, and what I love about the recipe you posted is that there are no novelty ingredients in it... think I have everything except the whole wheat flour :) Happy Purim!
ReplyDelete:-) Enjoy! I made these again and played with the recipe a bit. For the nuts I used 1/2 walnuts and 1/2 almonds, I added applesauce for a bit more moisture and some orange zest. They were really good! Thanks, you too!
